Ingredients
  

Main Ingredients
  • 1/2 cup cooked chickpeas
  • 1/4 cucumber diced
  • 1 small tomato diced
  • 2 tbsp onion finely chopped
  • 2 tbsp bell pepper diced
  • 1 tbsp black olives sliced
  • 1 tbsp fresh parsley chopped
  • 1 tsp fresh mint chopped
Dressing Ingredients
  • 1 tbsp olive oil extra virgin
  • 1 tsp lemon juice
  • 1/2 tsp red wine vinegar
  • 1/2 small garlic clove minced
  • A pinch of dried oregano
  • Salt & Black pepper to taste

Method
 

  1. Rinse and drain the chickpeas thoroughly if using canned chickpeas.
  2. Dice the cucumber, tomato, bell pepper, and finely chop the red onion.
  3. Add the chickpeas and all chopped vegetables to a mixing bowl.
  4. In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and black pepper.
  5. Pour the dressing over the salad and toss gently until everything is evenly coated.
  6. Sprinkle parsley and mint on top.
  7. Serve immediately or chill for 10–15 minutes to allow the flavors to blend.

Notes

For the best Mediterranean flavor, use fresh lemon juice and extra virgin olive oil. You can also add avocado, roasted red peppers, or grilled chicken to make it a more filling meal.
